Mouth watering comfort food! Beef shanks should be cooked slowly at a low temp to bring out the nutritional value of this cut. Beef shank cross cuts are cut from the hindshank or foreshank perpendicular to the bone. They are fairly thick, and are usually prepared by braising. The bone and cartilage are rich sources for important nutritional minerals and as the beef shanks simmer/cook, the minerals seep out and give the shanks a deep and rich flavor. There are many wonderful online recipes for cooking beef shanks! (You will be charged based upon actual weight after your order has been assembled.)
